Easy Healthy Dinner Recipe

So when I am trying to tone my body and lose some weight, I make very simple meals for my dinners during the week. But today, I wanted to step it up a notch.

Since I had the time and have had this very lean organic beef round steak sitting in my freezer, I thought today would be a good day to scour through Pinterest for a healthy (yet delicious) dinner idea.

I came across a Seared Steak  w/ Brussel Sprouts and Toasted Almonds recipe from the Martha Stewart website.

In their recipe, they used skirt steak which is a bit fattier. But besides their cut of beef, it was a pretty easy and healthy dinner recipe.

I have to say, the end result didn’t disappoint. It was very delicious!

Here is my slightly altered version of the recipe.

Seared Steak  w/ Brussel Sprouts and Toasted Almonds

Serves 2

Ingredients

2 Beef Round Stead – 6 oz (the original recipe called for : 1 skirt steak – 1 1/2 pounds & cut into 4 pieces)

1 TBSP Butter

1 lb brussels sprouts (trimmed and thinly sliced)

1/4 cup chopped almonds (toasted)

fresh lemon juice from 1/2 of a lemon

Sea Salt and Pepper

I first coarsely chopped the almonds and threw them in a medium hot pan till fragrant.

I then seasoned both sides of the meat with sea salt first. Then I added the pepper to each side.

*On a side note, I didn’t plan in advance to cook this recipe. So I researched ways to tenderize steak.

I found if you sprinkled 1 tsp of baking soda per pound on the steak and let it sit for 20 minutes, it will break down the fibers just like a meat tenderizer. Of coarse, you want to rinse off the baking powder afterwards.

It seemed to work pretty well. Try it and let me know how it went for you.

After placing the toasted almonds to the side, I placed the meat in the same pan. You will want to make sure the pan is searing hot in order to get a really nice sear on your meat.

Do not move the meat other than to sear the other side.

Be careful though. I put my heat up too high and the smoke detectors started going off in my house…whoops lol

Cook each side 3 – 5 minutes.

In the mean time, start cutting the ends off the brussel sprouts and slice them in to thin slices (assuming you haven’t done so already).

Once the meat is done, take it out of the pan and let it rest.

Reduce the heat to medium and melt the butter in the same pan the meat was just in. Add the Brussel sprouts immediately (you want the pan to still be pretty hot from cooking the steak). Sprinkle with a good pinch of sea salt and a little bit of pepper.

Squeeze the half of the lemon over the Brussel sprouts. Squeeze the lemon into your hand to catch the seeds.

Cook, stirring occasionally, till the Brussel sprouts are a nice bright green (3 to 5 minutes)

Add the toasted almonds to the Brussel sprouts in the last-minute of cooking.

Slice the steak, that has been resting, at a diagonal.

Dish up some Brussel sprouts and place the sliced meat on top.

    1. I would say that broccoli would work well. I would also suggest cabbage or even kale. Not sure how the Lenin would do with either, so you could use just olive oil and sea salt.
